Any insight into statistical analysis with the game? Were stats over time measuring up to the real MLB? Also, how was player progression? I heard reports that a lot of people were having problems with CPU teams just not signing huge name free agents at all, and them sitting on the free agent list all season.

Player progression can be tweeked or even set to random if you want. You can set the number of years that are taken into account for ratings recalculations, as well as the upper bound for percentage change.
The game isn't really designed to be a predictor - games such as Diamond Mind, Puresim and Dynasty are much more designed for that. The strength is in the fictional leagues, and I've had a lot of fun creating new worlds and seeing how these fictional players' careers progress - the first-round pick who's a major bust, the Mike Piazza surprise type, the minor leaguer who I stupidly traded away only to see him become a star. Strides have been made in bringing the historical up to scratch. Ultimately, though, that would pretty much require two games' worth of coders to completely do (since you're basically creating two games in one) which is why I think they've opened up so much of the customisibility and let people fiddle with things to their hearts' delight.
I haven't heard of the free agent issue, but I know that the three patches have made a lot of fixes in the financial/transactional side of things, so maybe that's fixed now.

Should I play that first, or Football Manager first?
I've never played either. I don't know much about world soccer, so I though FM might teach me a lot. But then, I DO know baseball and thus would probably be better at OOTP.
What do you think?

You should do baseball first and finally try out your Cleveland/Cincinnati theory in the create your own league mode.

You will learn about soccer from FM, but I think, since you know more and are more familiar with baseball (both in terms of good players and, more importantly, how the game works) you'll probably enjoy OOTP more, at least, straight away. There won't be as steep a learning curve for you.

silly
daring merged Reds/Indians team :p
