You can count your concerts however you want to, but I always went by this rule: number of DAYS of concerts.
Like, if I went to Coachella for 3 days, then that's 3 concerts. If I saw 10 bands or 1 band on one of those 3 days, it's still 1 concert. I suppose the only exception would be if I saw something in the afternoon of one day and then at a completely different and totally independent gig I saw someone later that night...then it's 2. But if it's all within the context of the same event, like ACL or SXSW, then it's the number of days.
But that's just me.

Guys, I counted going to Lollapalooza as 3 shows, not as 30 or whatever.
Furthermore, I counted MPMF also as 1 show per day.
However, I absolutely feel that I saw 2 separate McCartney shows and Cut Copy shows. The McCartney soundcheck was an hour long set with a setlist that bore little resemblance to the show later in the day. Cut Copy's soundcheck played not as long, I'll admit that (prob 40 min. or so).
And let me ask you this: if you only went to the McCartney soundcheck and not the main show, would you not list that as a show on your list?
On a related note: Dan, if you see 2 separate shows in separate venues in the same evening, would you count that as one show? I've done that on occasion, I remember going to Editors at the Mad Hatter, then going to She Wants Revenge at the Southgate.

Yes, that'd be 2 shows in my list UNLESS they were all part of the same big event.
I saw 3 shows in three different venues on the same night during CMJ one year and counted it as one.
If two awesome bands were playing in two different locations on the same night and I realized that the set times were conducive to going to both, and they were just both in NYC at the same time with no relationship to each other, that'd be two.
For the record ... all of these counting threads are purely by your own rules, though, so count as you'd like.
